Ingredients

Dry ingredients

  • 2 cups Blanched Almond Flour
  • 1 1/3 cups Quick cooking oats (plus more for topping)
  • 1 tbsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Sea salt

Wet ingredients

  • 2 large Eggs (at room temperature)
  • 1/3 cup Honey
  • 6 tbsp Unsalted butter (or coconut oil; melted)
  • 1 cup Unsweetened applesauce
  • 1/2 tbsp Vanilla extract
  • 2/3 cup Raisins (optional)

Instructions 

  • Preheat oven to 350°F (176°C). Line a muffin tin with liners.
  • Mix dry ingredients in a bowl. Whisk wet ingredients in another bowl.
  • Combine wet and dry, let sit for 10 minutes.
  • Divide batter into muffin cups, top with oats if desired.
  • Bake for 20-25 minutes, cool for 5-10 minutes before serving.
