0.5cupfresh cilantro leaves
0.5cupfresh mint leaves
0.5cupfresh basil leaves
2tablespoonssesame seeds(for garnish)
1ripe mangomango(peeled, pitted, and diced)
2tablespoonsrice vinegar
1tablespoonsoy sauce or tamari(gluten-free option)
1tablespoonhoney or agave nectar(vegan option)
1small clovegarlic(minced)
0.5teaspoongrated fresh ginger
0.25teaspoonred pepper flakes(adjust to your spice preference)
Instructions
Blend diced mango, rice vinegar, soy sauce, honey or agave nectar, minced garlic, grated ginger, and red pepper flakes until smooth. Set aside.
Prepare all vegetable and herb fillings by slicing and julienning as needed.
Dip a rice paper wrapper in warm water for 10-15 seconds until pliable. Place on a damp towel.
Lay avocado slices on the wrapper, add vegetables and herbs, then roll tightly from the bottom, folding sides in.
Repeat with remaining ingredients. Serve with mango sauce, garnished with sesame seeds and extra herbs if desired.
