Fresh and vibrant, these Avocado Spring Rolls are perfect for a light lunch or appetizer, packed with colorful vegetables and served with a delicious mango dipping sauce.

Ingredients

Rice Paper Wrappers

  • 8-10 pieces rice paper wrappers
  • 2 ripe avocados (thinly sliced)
  • 1 large carrot (julienned)
  • 1 cucumber cucumber (julienned)
  • 1 red bell pepper red bell pepper (thinly sliced)
  • 1 cup fresh bean sprouts
  • 1 cup thinly sliced purple cabbage
  • 0.5 cup fresh cilantro leaves
  • 0.5 cup fresh mint leaves
  • 0.5 cup fresh basil leaves
  • 2 tablespoons sesame seeds (for garnish)
  • 1 ripe mango mango (peeled, pitted, and diced)
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce or tamari (gluten-free option)
  • 1 tablespoon honey or agave nectar (vegan option)
  • 1 small clove garlic (minced)
  • 0.5 teaspoon grated fresh ginger
  • 0.25 teaspoon red pepper flakes (adjust to your spice preference)

Instructions 

  • Blend diced mango, rice vinegar, soy sauce, honey or agave nectar, minced garlic, grated ginger, and red pepper flakes until smooth. Set aside.
  • Prepare all vegetable and herb fillings by slicing and julienning as needed.
  • Dip a rice paper wrapper in warm water for 10-15 seconds until pliable. Place on a damp towel.
  • Lay avocado slices on the wrapper, add vegetables and herbs, then roll tightly from the bottom, folding sides in.
  • Repeat with remaining ingredients. Serve with mango sauce, garnished with sesame seeds and extra herbs if desired.

Notes

Keep the rice paper moist and work quickly to prevent tearing. Feel free to customize fillings with your favorite herbs and vegetables.
