Ingredients
Noodles
200gramen noodles
1tablespoonsesame oil
250gmixed mushrooms (shiitake, button, oyster)
2clovesgarlic, minced
1teaspoonginger, grated
2tablespoonssoy sauce
1tablespoonmiso paste
4cupsvegetable broth
1tablespoonrice vinegar
1tablespoontoasted sesame seeds
2green onionssliced
1optional boiled eggoptional
0.5teaspoonchili flakes(optional)
Instructions
Cook the ramen noodles according to package instructions. Drain and set aside.
Heat sesame oil in a large pan over medium heat. Add mushrooms and cook for 5-7 minutes until soft.
Add garlic and ginger; cook for 1-2 minutes. Stir in soy sauce, miso, broth, and rice vinegar. Bring to a boil, then simmer for 5 minutes.
Divide noodles into bowls. Pour hot broth and mushrooms over noodles. Garnish with sesame seeds, green onions, chili flakes, and add boiled egg if desired.
