A flavorful and comforting ramen dish packed with mushrooms and aromatic seasonings, perfect for a quick meal.

Ingredients

Noodles

  • 200 g ramen noodles
  • 1 tablespoon sesame oil
  • 250 g mixed mushrooms (shiitake, button, oyster)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 4 cups vegetable broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame seeds
  • 2 green onions sliced
  • 1 optional boiled egg optional
  • 0.5 teaspoon chili flakes (optional)

Instructions 

  • Cook the ramen noodles according to package instructions. Drain and set aside.
  • Heat sesame oil in a large pan over medium heat. Add mushrooms and cook for 5-7 minutes until soft.
  • Add garlic and ginger; cook for 1-2 minutes. Stir in soy sauce, miso, broth, and rice vinegar. Bring to a boil, then simmer for 5 minutes.
  • Divide noodles into bowls. Pour hot broth and mushrooms over noodles. Garnish with sesame seeds, green onions, chili flakes, and add boiled egg if desired.

Notes

Feel free to add extra vegetables or protein for a heartier meal.
