Instructions
Preheat oven to 375º F (190º C). Prepare muffin tins with spray or butter and flour.
Sift together flour, baking powder, salt, and cinnamon. Toss diced apples with cinnamon-flour mixture to coat.
Cream butter and sugar until light, then add eggs one at a time, mixing well. Stir in vanilla.
Fold in flour mixture alternately with milk. Gently mix in coated apples. Fill muffin tins 2/3 to 3/4 full and bake for 30 minutes.
Melt butter for topping. Brush muffins with melted butter, then dip into cinnamon sugar mixture. Cool before serving.
Notes
For best results, use fresh apples and do not overmix the batter to keep muffins light and fluffy.
