Ingredients

Fruits

  • 2 large apples (Granny Smith or Honeycrisp) (peeled, cored, and diced)

Dry ingredients

  • 2 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Wet ingredients

  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Glaze

  • 2 tablespoons powdered sugar
  • 1 to 2 tablespoons whole milk (for glazing)

Instructions 

  • Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  • Mix dry ingredients: flour, brown sugar, baking powder, cinnamon, and salt.
  • Whisk eggs, milk, melted butter, and vanilla. Combine with dry ingredients.
  • Gently fold in diced apples. Divide batter into muffin cups.
  • Bake for 20-25 minutes. Cool slightly, then drizzle with glaze.

Notes

For best results, use fresh apples and avoid overmixing the batter.
