Start your day with these delicious apple cinnamon quesadillas, combining sweet caramelized apples with melty cheese in a crispy tortilla.

Ingredients

Dough and Fillings

  • 2 pieces large flour tortillas
  • 2 medium apples (preferably Granny Smith or Fuji), peeled and diced
  • 1 teaspoon lemon juice
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 1 cup shredded mozzarella cheese (or your favorite melty cheese)
  • 2 tablespoons butter
  • to taste optional Maple syrup for drizzling
  • to taste optional Whipped cream for serving

Instructions 

  • Wash, peel, and dice apples; toss with lemon juice, cinnamon, and brown sugar.
  • Cook apples in 1 tbsp butter until soft and caramelized, about 5-7 minutes. Remove and set aside.
  • Place one tortilla in skillet, sprinkle with cheese, add apple mixture, then top with remaining cheese and second tortilla.
  • Add remaining butter around edges; cook 3-4 minutes until golden, flip, and cook other side until crispy.
  • Slice into wedges, drizzle with maple syrup, and top with whipped cream if desired.

Notes

For extra crispiness, cook with butter and flip carefully.
