Start your day with these delicious apple cinnamon quesadillas, combining sweet caramelized apples with melty cheese in a crispy tortilla.
Ingredients
Dough and Fillings

large flour tortillas

medium
apples (preferably Granny Smith or Fuji), peeled and diced

teaspoon
lemon juice

teaspoon
ground cinnamon

tablespoons
brown sugar

shredded mozzarella cheese (or your favorite melty cheese)

butter
to taste

Maple syrup for drizzling

Instructions
Wash, peel, and dice apples; toss with lemon juice, cinnamon, and brown sugar.
Cook apples in 1 tbsp butter until soft and caramelized, about 5-7 minutes. Remove and set aside.
Place one tortilla in skillet, sprinkle with cheese, add apple mixture, then top with remaining cheese and second tortilla.
Add remaining butter around edges; cook 3-4 minutes until golden, flip, and cook other side until crispy.
Slice into wedges, drizzle with maple syrup, and top with whipped cream if desired.
Notes
For extra crispiness, cook with butter and flip carefully.
