A quick and flavorful shrimp bowl featuring jasmine rice, fresh vegetables, and a spicy mayo sauce, perfect for a satisfying meal in just 30 minutes.

Ingredients

Rice

  • 1.5 cups jasmine rice (rinsed)
  • 2.25 cups water

Shrimp

  • 1 lb large shrimp peeled and deveined

Sauces and seasonings

  • 2 tsp olive oil or avocado oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp chili flakes (adjust to taste)
  • to taste Salt and pepper
  • 0.5 cup mayonnaise
  • 1 tbsp sriracha or hot sauce
  • 1 tsp honey or maple syrup
  • 1 tsp lime juice (freshly squeezed)
  • 1 small garlic clove (minced)

Vegetables and garnishes

  • to taste Thin cucumber slices
  • to taste Julienned carrot
  • 2 green onions (thinly sliced)
  • to taste Toasted sesame seeds
  • to taste Fresh cilantro leaves
  • optional Pickled ginger or kimchi

Instructions 

  • Rinse jasmine rice until water runs clear, then combine with water and cook for 15 minutes. Rest covered for 10 minutes, then fluff.
  • Toss shrimp with oil, paprika, garlic powder, chili flakes, salt, and pepper. Cook in a skillet over medium-high heat for 2-3 minutes per side until pink and caramelized.
  • Whisk mayonnaise, sriracha, honey, lime juice, and minced garlic to make the sauce.
  • Divide rice into bowls, top with shrimp, drizzle with sauce, and garnish with vegetables, sesame seeds, and cilantro.

Notes

Adjust chili flakes to taste and serve immediately for best flavor.
