Ingredients

Protein

  • 9 oz chicken breast

Vegetables & Greens

  • 4 cups spinach
  • 0.5 cup blueberries
  • 0.5 cup strawberries sliced into 1/4-inch rounds
  • 0.75 cup clementines peeled and separated into segments

Dairy & Nuts

  • 0.25 cup feta cheese
  • 0.25 cup slivered almonds

Dressing & Seasonings

  • 0.5 tsp lemon juice to toss with fruit
  • 0.25 tsp salt
  • 0.125 tsp pepper
  • 0.33 cup extra-virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 0.5 tsp mustard
  • 2 tsp honey
  • 0.5 tsp poppy seeds
  • 0.25 tsp salt
  • 0.125 tsp pepper

Instructions 

  • Cook chicken breast until fully cooked, then slice.
  • In a small bowl, whisk together lemon juice, olive oil, balsamic vinegar, mustard, honey, poppy seeds, salt, and pepper to make the dressing.
  • In a large bowl, toss fruit with lemon juice and a pinch of salt.
  • Arrange spinach on a serving platter, top with sliced chicken, fruit, feta, and almonds.
  • Drizzle with dressing and serve immediately.

Notes
