  • 0.25 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons lemon or lime juice
  • 1 teaspoon dijon mustard
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper

Instructions 

  • Add chickpeas, cherry tomatoes, red onion, cucumber, feta, and parsley to a large bowl.
  • Mix olive oil, balsamic vinegar, lemon juice, mustard, salt, and pepper to make the vinaigrette.
