Instructions
Preheat oven to 375°F (190°C). Line muffin pan or grease lightly.
Whisk together flour, baking powder, and salt in a large bowl.
In another bowl, beat melted butter and sugar. Add milk, eggs, and vanilla, whisk until blended.
Fold wet ingredients into dry, then gently fold in berries and lemon zest.
Divide batter into muffin liners, filling two-thirds full. Bake 18-22 minutes until golden and a toothpick comes out clean.
Cool muffins in pan for 5 minutes, then transfer to a rack.
Notes
For extra flavor, sprinkle a little sugar on top before baking.
