Enjoy quick and delicious berry muffins perfect for a fast breakfast or snack, bursting with fresh berries and a hint of lemon zest.

Ingredients

Dry Ingredients

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoon Salt
  • ¾ cup Granulated Sugar

Wet Ingredients

  • ½ cup Butter, melted
  • 1 cup Milk
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract

Berries & Zest

  • 1.5 cups Assorted Berries such as blueberries, raspberries, strawberries
  • 1 teaspoon Lemon Zest (optional) (for added zest)

Instructions 

  • Preheat oven to 375°F (190°C). Line muffin pan or grease lightly.
  • Whisk together flour, baking powder, and salt in a large bowl.
  • In another bowl, beat melted butter and sugar. Add milk, eggs, and vanilla, whisk until blended.
  • Fold wet ingredients into dry, then gently fold in berries and lemon zest.
  • Divide batter into muffin liners, filling two-thirds full. Bake 18-22 minutes until golden and a toothpick comes out clean.
  • Cool muffins in pan for 5 minutes, then transfer to a rack.

Notes

For extra flavor, sprinkle a little sugar on top before baking.
